This has not been tested in my kitchen, yet, though with the holidays looming it may happen quite soon.
Cake Mix Pie Crust
1 box cake mix
1 tbsp unsalted butter, softened
3 egg yolks
1 whole egg
baking spray of choice
Place all ingredients into a mixing bowl and combine until a dough is formed.
Divide the dough in half.
Dust rolling surface with flour to prevent sticking. Roll out one piece of dough into a circle
large enough to line pie pan.
Gently fold dough over by half and move to sprayed pie pan.
Press dough circle gently into pie pan to ensure there are no air pockets. Trim the excess
dough from the edges.
Bake at 350° for 25-27 minutes or until golden brown.
Duncan Hines, who offered this recipe, advises to bake the crust BEFORE filling, leading one to believe that this is a good crust for no-bake pies. If you decide to bake with a filling,
be sure to use a crust cover of some sort to prevent it from burning.
I am not sure how this would work for a lattice top pie, unless the bottom crust is pre-baked as instructed, then filled, raw dough used for the lattice, and baked again.
